Apple Fennel Compote

From Family Circle

1/3 cup cider vinegar

1/3 cup brown sugar

1/4 tsp cloves

1/2 tsp cinnamon

1 tsp cumin

1/2 thinly sliced fennel bulb

1/2 onion, thinly sliced

2 peeled and thinly sliced aples

2 minced cloves garlic

In sautee pan, combine the vinegar, brown sugar, cloves, cinnamon, and cumin. Let cook until sugars dissolves. Add the fennel, onion, apples, and garlic and let cook about 20 minutes or until the apples are soft. Serve hot or cold.
