I am looking for a good onion soup recipe that is non dairy (dh won't touch cheese)

I could be wrong, but I think most onion soups can be made pareve, and then after it's already cooked, you throw some cheese on top. So you can serve him the soup without the cheese, and then put cheese in the bowls of whoever does want it.
Also, if the recipe calls for milk, you can substitute it with soymilk/ricemilk.

Yeah, I make French onion soup, and none of the ingredients are dairy, you just have the option of putting grated cheese on top when you serve it.

Ingredients:
5 onions
4 cans beef broth (or chicken broth)
4 cans water
2 tablespoons butter
2 tablespoons flour
1 teaspoon garlic powder
1/4 cup Worcestershire sauce
1/2 cup cooking port sherry
shredded mozzarella cheese
toasted French bread
dash of salt and pepper
Directions:
Peel and slice onions and put into a large pot with butter and saute until onions are soft, being careful not to burn. Add flour, Worcestershire sauce and then port sherry, stir. Add beef broth and water. Dash in salt, pepper and garlic powder. Cook on high until it boils, being careful so that it doesn't boil over. Put oven on broil and toast the bread. Put soup in oven-safe soup bowls, place a slice of toasted bread on top and top with mozzarella cheese and cook in oven until brown.
This recipe for French Onion Soup serves/makes 8
