I currently use Google Chrome on my laptop. I will not be using the laptop anymore and want to unsync it from my account. How would I do that? Would uninstalling Google Chrome from that computer do the trick?

Go into Chrome settings, then select "disconnect Google account". Then untinstall Chrome.
