I just made a pot of zucchini soup. It's really good except that it's a bit salty and idk if my guests will eat it like that. Do you think I can add water and a potato to water down the salt and keep the thick texture? What should I do. I don't want it to be tooo liquidy. TIA

start with a potato - its supposed to absorb the salt, and its yummy in zucchini soup anyway (blend it in after you cook it for a while)

actually now that I think about it could be you should take it out again after boiling it for a while - if its supposed to absorb the salt, u probably don't want to blend it back in again

here's what I would do.
Peel and cut a raw potato into smallish pieces. Add it to the soup to cook. The small pieces will cook quicker than a whole potato. You could add a little water if necessary. If it is too watery, just simmer longer, or add another potato (or if you have instant potatoes that will work well too.)
Blend or mash the potato in to the soup once it is cooked.
Good luck!
