When I make banana cake, I use a choc. buttercream-type frosting.

Spice and Spirit has a recipe I've used...
Mashed banana (1 C. I think?)
Confectioner's Sugar
Stick of marg.
tsp. lemon juice

or something to that effect, and it's pretty good.

If you're looking for a good substitute for milk, ricemilk or soymilk generally work very well in many recipes.

Hmmm...I'm getting so in the mood for a frosted cake!

Chocolate Moose the cake is for the guest houses when my sils inlaws come for shabbos sheva brachos. I figured to frost it and then decorate the tops with some chocolat molded colorful flowers.

My friend made a delicious chocolate banana cake from one of the KBD books, it came with a recipe for frosting. It was such a WONDERFUL cake. I was on a diet at the time, and I couldn't stop eating it. What a great cake.

If you make it, please save me a piece!

LOL Only 1. I ate by someone who served a frosted banana cake. Its was so good. I think I've seen cream cheese frosting to go with banana. You can use Toffuti.

simple ganache glaze

melt chocolate chips either in glass bowl in oven or whatever in microwave add unwhipped pareve whip cream - will be a nice chocolate that doesn't harden

I have a recipe for banana cake from my husband's grandmother who died long before I met her. I don't care for banana cake but my husband has fond memories of it so I decided to try it. My question is, the recipe calls for banana extract (it says 1 tsp. banana) in addition to bananas and I don't see banana extract in the store. Does it exist?

You know what, Supermom? If you get those little candy bananas, they'd also look really great!

I once got carrot cake for Mishloac Manos with little carrots out of orange sugar on top....so cute!
