There is one in Quick and Kosher by Jamie Geller. I used it last year and everyone loved them! Its really easy b.c doesnt use yeast, just baking powder. Its dairy, if that matters.

I also want to hear easy recipes. my kids want to make them with me, so the simpler the better. also, isn't there an ingredient we're supposed to put in the dough so it doesn't absorb so much oil? I forgot what it is.

Here it is: Below she says tablespoon full, but that I thought was way too smal I used an ice cream scooper for mine. Were awesome!!
Recipe
Sufganiot (Jelly Doughnuts)

Ingredients
2 1/2 cups self-rising flour
2 (8-ounce) cartons vanilla low-fat yogurt
2 tablespoons vanilla sugar
2 eggs
6 cups canola oil
3/4 cup confectioners' sugar
1 cup seedless strawberry jelly
Directions
Preparation
In a large bowl, place flour, yogurt, vanilla sugar and eggs.
Knead until all ingredients are combined and a sticky, doughy batter is formed. Cover with a kitchen towel and let it rest for 15-20 minutes.
Heat 6 cups canola oil in a 6-quart stockpot, covered, over medium heat.
When dough is ready, uncover oil and raise heat to high.
Scoop out a tablespoonful of batter and drop in oil. Don’t make the doughnuts too big, so they can cook through.
You should be able to fry about 7 doughnuts at a time. Using a slotted spoon, turn doughnuts when halfway browned, about 30 seconds to 1 minute. Fry for another 2-3 minutes or until entire doughnut is deep golden brown and cooked through.
Remove doughnuts and let cool on paper towel-lined plates. Repeat previous 2 steps with remaining batter.
Fill a squeeze bottle with jelly and inject a little into each doughnut.
Roll each doughnut in confectioner’s sugar. Or, shake 3 doughnuts at a time in a paper bag filled with confectioner’s sugar.

If you cant get self rising flour I used this as a substitute-
FLOUR, Self-Rising 1 cup (140 grams) 1 cup (130 grams) similar grade (all purpose) flour plus 1 1/2 teaspoons baking powder plus 1/4 teaspoon salt

Its not what you put IN the dough, but in the oil- a carrot. once it starts to burn take it out and put in a new carrot.

You can buy parve soy yogurt. I used it with great success for donuts.

Sorry I actually think that some recipes have Cognac in it to prevent the doughnuts from absorbing too much oil. But ive never tried a recipe like that before.

This is mine and it's really good.


DOUGHNUTS:
2 pkgs. yeast
1/4 cup water (105-115 degrees)
1-1/2 cups lukewarm milk (scalded, then cooled)
1/2 cup sugar
1 tsp. salt
2 eggs
1/3 cup shortening
5 cups all-purpose flour
vegetable oil

CREAMY GLAZE:
1/3 cup butter
2 cups powdered sugar
1-1/2 tsp. vanilla
4–6 tbl. hot water

CHOCOLATE FROSTING:
1/3 cup butter
2 cups powdered sugar
1-1/2 tsp. vanilla
4–6 tbl. hot water
4 ounces milk chocolate chips or semisweet chocolate chips

Dissolve yeast in warm water in 2-1/2-quart bowl. Add milk,salt,eggs, shortening and 2 cups flour. Beat on low for 30 seconds, scraping bowl constantly. Beat on medium speed for 2 minutes, scraping bowl occasionally. Stir in remaining flour until smooth. Cover and let rise until double, 50-60 minutes. (Dough is ready when indentation remains when touched.) Turn dough onto floured surface; roll around lightly to coat with flour.

Gently roll dough 1/2-inch thick with floured rolling pin. Cut with floured doughnut cutter. Cover and let rise until double, 30-40 minutes.

Heat vegetable oil in deep fryer to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts as they rise to the surface.
Fry until golden brown, about 1 minute on each side.
Remove carefully from oil (do not prick surface); drain.

Dip the doughnuts into creamy glaze set on rack; when slightly cooled spread chocolate frosting on top.

Heat butter until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water, 1 tablespoon at a time, until desired consistency.

Where can you buy soy yogurt in Brooklyn? what brand? Is it pareve or dairy equipment?

I've tried various recipes, but they're not fluffy and doughy like the store's- they're full of air inside. How do u get that fat fluffyness to the doughnuts?

The one on kosherista is excellent and comes out perfect!!! Pinkflower is correct!! If you want good and easy make these. I also saw these posted on Shmais-the Lubavitch website!
