So the leaves look like kale leaves, but the whole thing is shaped like a cabbage head. What is it? Is it still kale?

yup, savoy cabbage.
the one time I used it, it was in an eggroll recipe.

When I buy kale or s/t like that, the cashier always asks me what it is...they don't know!

Yup Savoy cabbage. You can cook like regular cabbage. Lovely in soup and stir-fry, or you can steam/lightly boil season with vinaigrette or soy sauce or sauteed garlic, or add to creamy mashed potato. It's a bit of pain to check the leaves though. I know some people rely on hazaka (check three outer leaves and you can use if they're clean).

I forgot to add, the one thing Savoy cabbage is not suitable is to make coleslaw.

Wow thanks for the tips.
I made a great cabbage soup last week and I think I'll make it again and add this in as well.
