ambrosia is easy and pretty. can of pineapple tidbits, can of mandarin oranges, rich's whip container, and container of strawberries in syrup. defrost and mix together. double or triple as needed.
it looks really pretty in nice plastic goblets or serving bowls with a stem.

You could do a lemon theme. A lemon sorbet served in a half a lemon peel. Lemon cake to the side or something.
Or I once decorate a plate (saw it somewhere) with a mini fork and spoon design in middle of long rectangle plate. I served a peanut chew ice cream with a chocolate fence around it (was a patchke to make the fence too idea from mishpacha) and a chocolate cake with a hot chocoate sauce on top on the other side.
You can do a hot apple and custard crumble, with ice cream.
Will let you know if I think of more stuff.

ooh... the peanut chew ice cream with the chocolate fence sounds interesting...
do you have a recipe?
maybe a picture... im not quite sure I can visualize what you are talking about...

First, the one that I did that got the most rave reviews was a bride cake - where the cake is a dress and there's the top half of a doll (plastic) you put on top and then decorate. But then the dessert is cut from the whole thing, you probably have to buy the pan and/or decorating items, and it takes a while!.
How about individually layered mini-cakes? You could make a couple of thinner, lighter textured cakes, then cut circles or squares out of them. Frost and stock, garnish, and they're ready! I've done one with a light lemon cake and then lemon or raspberry icing, or you could do chocolate and orange or raspberry, or whatever the couple likes.
You can google them for ideas, but you can do something simple like leaving the layers showing or a pour-over glaze or get complicated and see what people are doing with fondant and piping work.

The prettiest one I saw was so simple. Buy plastic see-through parfait cups. Layer 2 different kinds of pareve ice cream, possibly with crushed oreos or some sauce in between. Add a topping of your choice. Freeze. Stick in a Pirouette or other pretty cookie on top.

if you're going to do the peanut chew one, please make sure no one is allergic to peanuts first. people don't think about those things when it doesn't apply, but it can be really scary for parents of kids who are anaphalactic allergic (speaking from personal experience)

Peanut chew Ice cream:
8 oz baking chocolate
3 1/2 cups cornflakes (crushed)
1/3 cup peanut butter
Ice Cream:
6 egg whites
2/3 cups sugar
2 vanilla
2 16 oz whips
Mix cornflakes and peanuts butter. Flatten on cookie sheet and pour over melted chocolate.
Refrigerate.
Make snow, add sugar. Add whips.
Break of little pieces of crunch and mix into ice cream. Freeze!
You can make them into little cups...
