If you leave a company where you had health insurance, it is my understanding that you have the option of paying the complete amount for the exact coverage you had while you were working there.
What if you had medical and dental...could you opt to only keep the medical for example?

Yes you can be on Cobra for I believev 18 month after you leave a company. You can opt for medical or dental or both. Basically as you said your paying the premium and sometimes an administrative fee.
