I'm going (nearly)carb free until my blood sugar stabilizes enough (probably about 2-3 weeks and then we're going to reintroduce whole grains). My doctor gave me a lot of direction but I need menus for this to work.

I'd love to hear breakfast suggestions cuz I'm used to having some form of bread for breakfast. Lunch I'd like less expensive options than salmon. And snacks (I must have that for my sugar levels) And dinner. Help me everyone I'm so so lost.

Here are some ideas he gave me:

Breakfast options:
Egg white omlet (3 egg whites)+ sliced veggies
8 oz Sugar free yogurt+ ???

Lunch options:
4 oz sliced smoked turkey breast+ 16 oz green salad
6 oz chicken breast grilled+ 16 oz green salad
6 oz salmon fillet grilled or herb rubbed+ 16 oz green salad
2 slices (thin) of eggplant sprinkled with mozzarella cheese+ 16 oz green salad or steamed veggies
2 hard boiled eggs+ steamed veggies
6 oz tuna drained+ 1 T lite mayo+ 16 oz green salad
2 large mushrooms stuffed with cheese+ 16 oz veggies


Snacks- 1 snack between breakfast and lunch and one between lunch and dinner and if dinner is earlier than 7, 1 post dinner before 9pm:
Nuts
Sugar free ice pop
1 bag lite popcorn (no more than once a week)
3 stalks celery + 1 T sugar free peanut butter


Dinner:

Any of the lunch options can be dinner too

Liquids:

56 oz water or seltzer
Plus 1 cup of veggie juice if possible (like carrot juice or tomato juice)
pus 1 cup green tea or herbal tea

Try cucumber in your yogurt for breakfast (Greek fat free is yummy). Veggies can be good for breakfast in general; are there any that are off limits?

Sunflower seeds make good snacks.

Costco seems to have the best salmon prices I've found. The large Kirkland bags in the freezer section have hechsher.

If chickpeas are allowed, they can add protein and interesting texture.

The three vegetables u listed are all high in carbs, potatoes being the worst of all! I would rather suggest broccoli, cauliflower, peppers, eggplant, spinach...

As far as I know, chickpeas has a lot of carbs.You can always ask Dr. Google

No potatoes. They are good food in general, but they do have a low glycemic index, meaning they become sugar rather fast in the body.

Carrots are great in general, but they do have their own natural sugar. You might use celery instead. I don't know how you feel about onions. I don't know how you feel about red, yellow and green peppers.

I don't know about chickpeas.

I would stay away from artificial sweeteners; I have heard they can cause an insulin spike just like sugar. But I am no expert.

Coffee is fine with nothing, oddly enough, if strong. Also de-caf.

Take your vitamins, calcium, and acidophilus.

You are going to like a little cumin on your chicken breasts, a little garlic powder, and a little turmeric for yellow color.

potatoes have a very HIGH glycemic index.

LOL I just re-read what I wrote. I meant to say that most veggies are ok EXCEPT pot, sweet pot and carrots.

Yes, chickpeas are high in carbs and doc said a handful once a week but not more.

hopefully this will help you see what's good to eat or avoid when it comes to veggies - fruit has a lot of sugars

avocado is a delicious snack
as are olives both spanish & black
try cucumbers in a glass of water they are nice & refreshing

Your doctor's plan is quite sensible. It's important to track your calories to ensure that you're not eating too little, thus you'll end up feeling weak and shaky and it will be difficult to stick to it.
My fitness pal is a great way to track calories...

In NY there is a company called Carbolicious that makes extremely low carb muffins, cakes, breads and melba toasts, I really enjoy the melba toasts as a side to my protein and salad.
There are also very low carb ices that I enjoy as a snack.

I am on a low carb diet, and eat a protien shake for breakfast in the form of a smoothie every morning.
