Looking for some ideas of budget friendly gifts for people hosting us for meals over RH and Succos (in Israel)... ideally home-made, and not honey cake! Any ideas?

Ask what you can bring? I always like people to bring salad or dessert because I don't like dealing with those things, but your host may love making beautiful salads and desserts and not appreciate it. Or have specific kashrut concerns, or whatever else.

When you ask what you can bring try to be specific. Your host doesn't know how far you are willing to go so she might not be so comfortable sharing with you what she might really appreciate.
I.e. I'd like to contribute to the seudos. Can I a make you a Potato kugel or would you rather prefer an apple kugel or perhaps a noodle kugel? or would it be more helpful if I rather prepared some salads, like potato - cucumber or other salad...
If she refuses the help you can always buy something to snack on, I.e. a nicely gift-wrapped chocolate platter..
You can even do both if you want to be extra gracious...
