Try the sweet potato burritos that Shalshelet posted about halfway down the page. They are awesome!

If you don't want spicy, then leave out the chili/cayenne pepper. I put it in, but in extremely reduced amounts.

Low carb burritos:

Lettuce leaves instead of tortillas.
Ground beef cooked in olive oil with chili powder, paprika, garlic, salt and pepper.
Hummus or mashed black beans.
Tomato, onion, green pepper, chopped smallish.
Salsa or schug adom.

Just take a piece of lettuce, smear it with beans, sprinkle on the beef, top with salad and salsa.

In a large pan, saute an onion and ground beef (I use about 1 and a half lbs) until no longer pink. Drain some of the oil.

Add a teaspoon chili powder(less if you don't want it too spicy) and a sprinkle of oregano. Keep stirring for a few minutes.

Add in 1/2 a jar of salsa (you can use mild) and refried beans (I can't find kosher, so I make my own: In a pan, saute a can of red kidney beans mashed with a potato masher, add in some olive oil and spices like garlic powder and onion powder).

Spoon some of the miture on a tortilla and wrap up!

this is so so good!! I sub black beans for the kidney beans though. And you could leave out the cheese and do chicken or beef too.

Addictive Sweet Potato Burritos

Cook Time: 20 Minutes
Ready In: 50 Minutes
Servings: 12

"These unusual burritos are made with sweet potatoes, spices and kidney beans. They freeze well, and can be deep fried instead of baked."

INGREDIENTS:
1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet
potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.
3. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.
4. Bake for 12 minutes in the preheated oven, and serve.
