My latest favourite: Persian Food from the Non Persian Bride.

I also like Norene Gilletz's "Norene's Healthy Kitchen" and "Healthy Helpings." (Previously titled Meal Leani Yum)

I also find Enlitened Kosher Cooking very useful.

Spice and Spirit is wonderful.

Gatherings is nice, but I don't use it so much. (Mostly because I use the other cookbooks more often.)

I grew up with Norene Gilletz's "Second Helpings Please." It's a classic, but I use the more recent ones.

I have a library of cookbooks. The 2 that I enjoy the most are the 2 dining ins. They're my favorite.

Kosher Palette/Kosher by Design series. And as an all-around basic cookbook which will have everything you could possible need--The Joy of Cooking. It's my bible and I'm on my 2nd copy which is falling apart now. It is the best cookbook out there to give you basic instructions on about everything you can think of as well as more sophisticated things. Granted a lot of it isn't kosher, but I do a lot of substitution and some stuff you will just ever be able to use.

I would say the Dining Ins and What's Cooking are my most used cookbooks.
