so what is it about those miserable hardboiled eggs that you can't peel them? you know, those rare ones where the shell doesn't slide off, but breaks off into itty-bitty pieces and you have to practice anger control or throw the egg in the garbage because those bits of shell are pulling off egg?
what's with those eggs? can that kind of awful peeling be prevented?

Motek, what helps with me is as soon as I turn the fire off I put the pot straight into in the sink and let cold water run on the eggs for 5 minutes and it really helps with making them easy to peel ,even the next day.

I think that cold water is the trick. That, and not using the freshest eggs, yucky as it might seem.

Motek w/h me for awhile it was more then just a few that I had that problem w/h.
Till I decided to follow mothers advice on rinsing or even letting sit in cold water for awhile. Does the trick!!
Proud what a pain to peel as soon as they're boiled... don't you think

I run cold water and throw them in the fridge (or freezer if needed asap)

Rolling them also helps - the shell sometimes comes off in one or two pieces like that.
Good luck.

adding a drop of salt in the pot and when done rinsing it right away in cold water does the trick.
I used to always undercook or overcook my eggs. My mil taght me to make perfect eggs. She brings the water to a boil. Shuts of the flame and let sit covered for 10min.
How does everyone cook their eggs?

This thread is very timely... my husband was just complaining that he ruined a bunch of eggs because he didn't know how long to boil them for, and I realized that I don't either...
SOOOO, it's the "boil water then let steam for 10 minutes"
or "cook on high for 18 minutes."
Thank you, peoples!
(Goes to write down on paper on fridge for future reference)

oz, I DO peel eggs, you know!
actually, this thread was prompted by a lengthy phone message on my machine from my ds (dear sister) who was pontificating on this very subject
she has a weird theory about it which I won't even repeat because I think it's tweet tweet (for the birds) b'mechilas kevoda (begging her pardon)
I put eggs in pot and place on high flame, set timer for 25 min. rinse in cold, stick in fridge
usually have no problem
RARELY have problem
also heard that freshest eggs can PPP (pose peeling problems)
