My daughter recently came home from a friend raving about their wheat berry salad. When I called for the recipe, the mom said she doesn't have one, she just throws it together, but since I have not made wheat berries before, I need more guidance! The salad had wheat berries and pomegranate seeds. Would any of you have a salad with wheat berries that they could share? Thanks so much!

thanks, one more question, the mom said she soaked the wheat berries for days. Does that make sense to you?

I've never done that. I just cook them as directed in this recipe. But I can see how that's possible if you want to soften them without cooking.

yes - soak them first - just like you soak beans to "soften them a bit" before cooking - you soak the wheat berries - they take a LONG time to cook.
so yummy and chewy!
