The trick for making good thick mayo, is putting the oil in very, very, very slowely.I first mix 2 eggs then add in the spices a pinch of salt,b.pepper & garlic, mix in 1-1/2 c.oil then add in a Tablespoon of lemon juice, and mixing it in well.
