Bought a bag at the grocery for a change from regular potatoes. Has yellow, purple, and white potatoes. All minis. How would you preapre them? TIA!

Wash them well. If they are bigger than bite size then cut them in half. Otherwise leave them alone. Toss them with olive oil and spices (salt, pepper, onion powder, garlic powder). Add some mustard if you like the taste. Roast them until tender.
If you don't mind a little extra work, coarsely chop some shallots or onion to roast with the potatoes.
