The recipe says 2 Oz Yeast Which I assume is fresh. Can I use dry yeast? If so how much?

1 oz. = 1 Tablespoon
For 6 lbs. I use 4 Tbs. (to be argued Iy”h below by others)
Enjoy the smell, I’m stuck on my chair.

shall I modify ... I use 2 packets where I use 1 1/2 oz of fresh ... & that is to 7 - 9 cups of flour depending on high gluten or not ... but whatever ...

I buy the things of fermipan (instant dry yeast) and use 2 tablespoons per 2.24 lbs. of flour and it's great.
