I just bought this pastrami roast. It's all prepared comes with simple baking instructions to put a pan of water underneath the meat and put the meat in a separate pan above the water. Does anyone know if it should be covered in the oven or kept open on top of the pan of water??? It was an expensive roast I don't want to ruin it! Thank you all

I keep it uncovered. That's the point of the water underneath. Itcreates a steamin the oven.

You can bake it uncovered at 275 for 4 hours
