OK.... So I just bought a box of Canneloni.
I want to make it for Shavuos iy"h.
Have any of you ever made it?
I have a couple of questions, as this is the first time I'm making it:
1) Do you stuff them while they're raw or cooked?
2) What's a good "stuffing" for Canneloni? I'm thinking something along Spinach and Cheese.... But, if you know of any others, I would love to hear.
3) Does it have a sauce?
4) Do you bake it covered/uncovered?

It depends on the type of noodle, some you stuff raw and some you have to cook first. It should say on the box.
I usually stuff it with ricotta (tho hard to find sometimes in Israel) and cottage cheese mixed together with a drop of marinara sauce. Some I leave without the sauce. I also put in different vegies into some of them-not eveyrone likes it with vegies. Its good with mushrooms, or spinach. Then I pour a marinara sauce over the whole pan-I usually use a sauce with vegetables in it so at least the plain ones get some sort of vegie.
I cook them covered so the noodles are soft and make sure there's enough space between them, they get bigger when they bake.

I once bought it too and didn't find a recipe, so I just filled it with spiced mashed potatoes and sour cream, and spread pizza sauce under it and over it and put lots of grated cheese on top. the osem kind doesn't need to be cooked first, but make sure there's plenty of liquid/sauce in the pan.
