It depends on how many people you're cooking for.
I use a 12 qt for soup.

The standard is 12 quarts but if you are cooking for a hungry army, go to a restaurant supply store as they have mega sizes.

In general stainless steel is good, but if all you are using it for is stock or other liquid, aluminum is best because it is lightweight and you don't need the enhanced conductivity of clad pots. It won't stay as pretty as stainless steel but it will be very functional.

Should be but stainless with aluminum clad bottom is also fine. I wouldn't want to invest a lot of money in a stock pot for Pesach.

The aluminum clad stainless pots theoretically provide a more even browning and are sturdier and look prettier but if all you need is a bag pot to cook soup or boil water, anything will do. If you are browning, just be careful to watch but liquid soup doesn't need the even slow heat of expensive cookware that you would braise meat in.
