I'm out of town (out of NY) by my parents for Pesach. I forgot to bring the Pesachdik gluten free hamburger buns and hot dog buns with me from NY! Does anyone have any good recipes for making rolls/buns using potato starch?

I have a wonderful pizza recipe that is gluten free.
Ingredients
Crust
2/3 cup coconut flour
3cups mozzarella cheese
4 1/2 tablespoons cream cheese
1/2 tablespoon tapioca starch
4 eggs
Topping
Pizza sauce
Mozzarella cheese
Parmesan chees
Sautéed onions, peppers, and mushrooms
Crust
Gently melt the mozzarella and cream cheese over hot water or in a microwave. Combine with eggs coconut flour and tapioca starch. Knead th8s dough until well combined. Place parchment paper on a cookie sheet, spray with olive oil, and spread dough with your Hans. It will be as thin as toy can, but able to stand up to the toppings. Bake the crust at 350 degrees for 8-10 minutes.
Remove from oven and add toppings. Put bake in oven until cheese is melted. You won’t believe this is Pesachig.
