heard esrog peels have health benifits just like the fruit. should I leave them? I boil it anyway 7 times so the bitterness comes out. but im afraid the rind will be too thick.

Unless you have organically grown esrogim, you should not use them for food because they are not grown for human consumption and aren't subject to the same pesticide laws as fruits grown for food. But if you insist on cooking them anyway, you're afraid the rind will be too thick for what?
