Need help with my menu

OK, So I'm having guests over for a Chanuka party and putting together my menu. Please tell me if its enough and what you think.. I'm going with Latin flavors

Appetizers -
* mini tacos with spicy cilantro carrot salad and purple cabbage slaw
* avocado eggrolls with a peanut dipping sauce

Soup -
* Fresh corn soup with a roasted corn and avocado salsa

Main course -
* Sous vide hanger steak with chimichurri
* fried yucca chips with cilantro lime aioli
* sweet and spicy bacon strips

Dessert -
* churros with a variety of dipping sauces
* strawberry salsa

Beverage -
* watermelon mojito

Please help me with a vegetable side dish for the main course that will go with the Latin theme

How about a salad or some type of roasted veggies? Maybe mini roasted peppers? Roast carrots? or a mixed veggie stir fry. I'm not so familiar with latin cookery but I guess you can season accord to the theme. I wouldn't add any more carbs, you already have plenty.

You could do roasted or sautéed zuchinni Or roasted squash, or slow roasted cherry tomatoes or a jicama citrus salad with cilantro or mint

arroz con gandulas verdes [green pigeon peas, cilantro, roasted pepper, spanish olives with pimentos & some sazon con culantro y achiote]

despite the carbs it is needed if you're going to be authentic

also make a salsa with fresh veggies ... it'll help the cause

& egam ~ great idea for the plantanos ... double fry & flatten between

I do a roasted corn, black bean and mango salad

I would probably roast veggies with Mexican seasonspings like oregano and cumin.
