There was a recipe fairly recently in one of the magazines that included garlic and onions being roasted in the oven with oil and spices. Does anyone recall it? Do you have the recipe? Thanks!

I don't know what magazines said but I make roasted garlic and onion dip in the oven all the time
Garlic...put peeled garlic clovessels in oven proof tray or bowl (I use little round one) then I put olive oil until it covers garlic. I put in salt and Italian seasoning and bake in oven till bubbly and brownish. Then take out and mash

Onions. Dice some onions. (I don't measure) put in oil. Salt. Paprika and garlic powder. Bake in oven until browned. And roasted.

Shopmiami, whatever recipe you use make sure to peel garlic and check every clove for infestation.in the past few years, one can often come across garlic infested with mites (?).
Many recipes call for toasting *whole* head of garlic.
