Hi, I have an abundance of extra sweet potatoe baby food jars, and some carrot jars, baby decided she doesn't like these flavors anymore.
What can I do with it?
Anyone have a pie or muffin recipe I can use them for?

This works well for kugel or muffins:
2 cups sugar (I use less)
4 eggs
1/2 cup oil
1 tsp vanilla
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 cups flour
1/2 cup water
3 jars (4oz) carrots
I imagine it would work for sweet potatoes too, but I'd use some nutmeg and/or cinnamon instead of the vanilla.

carrot kugel (can make into muffins)
8 ounce baby carrot (4 large carrots)
1 c flour
1/2 c brown sugar
1/2 c sugar
1 1/2 tsp baking powder
1/2 c oil or applesauce
2 eggs
1 tsp vanilla
you can really substitute any muffin kugel recipe with the sweet pot or carrots.. if you have a pumpkin muffin recipe or a sweet pot recipe just use the baby food.

I just made these with sweet potato jars, thank you so much the kids love it!
