I need to pay someone for a service. I don't know this person nor the business. It's not local. How can I best protect myself in case of something going wrong?

Credit Card - because the credit card company usually offers some buyer protection programs.

Credit card with good buyer protection (Amex), or PayPal. PayPal takes a little longer to resolve disputes though...

If you use PayPal, make sure to use goods and services not friends or family otherwise you will have a harder time fighting for your money back.
