Sorry to go amother. I have a good reason. How much liver do I need for about 80 people, and kids? I made about 7 lbs., with 6 eggs per pound. Tastes pretty good, b"H.
I'm looking for answers from caterers or people who've cooked for a crowd. I've seen a lot of recipes that say this much liver + that much eggs serves x number of people, and I can multiply too. I just need some reassurance.
Thanks!

I know this doesn't answer your question, but you can always make it stretch further depending how you serve it.

If you pre-spread it on crackers and plate those crackers you need much less than either pre-plating a scoop per person or serving family style.

(Just don't let the crackers get soggy).

Thanks but doesn't answer my question. I'm not doing the serving. I'm trying to find out from one of the planners if it will be plated per person, or on platters. Spreading a few hundred crackers doesn't seem likely.
