Feeding DS green vegetables...

B"H ds who is 1 eats very well. But I unfortunately am not giving him enough green veggies. We eat a lot of cucumbers and peppers, etc., etc., etc., but I feel like they don't get soft enough or they have skins that are hard to eat even when cooked. Even broc. doesn't get really soft unless you kill it. Any ideas of how to make green veggies able to be eaten by a one year old?

You could make broccoli soup, or make a fish/mash potato/spinach pie. You could also cook tomato, pepper, eggplant and zuccini. He should be able to eat that. A 1 yr old should be able to eat cooked broccoli or zuccini with a bit of 'crunch'!

Brocolli soup is great. Spinach can be added to soups, scrambled eggs, quiches, pasta and cheese etc. and peas can be cooked up and mashed. Make sure if you blend the peas well bc otherwise they can be a choking hazard.
