I always double it, so:
2kg flour
Up to 1 1/2 cups of sugar
2T salt
3T dry yeast
Almost 5 cups of water depending on the humidity
2/3 cups oil
I add 2T baking enhancer and a little vinegar.
Proof the yeast with 2T of the sugar and 1cup of very warm water. Whisk all the dry ingredients together and make a well in the middle. Pour the proofed yeast, remaining water and oil. Mix and knead it adding water if you need to to get a good consistency. Let rise till doubled. Braid/shape, let rise again. I make 8 challahs from this. Paint with beaten egg.
Bake at 325 F for 30-35 minutes. Let cool on a rack.

This!! I've made it now for the first time all I can say is DELICIOUS!! But be religious abt the instructions. It came out absolutely yummy

I second that! So easy, and heavenly. I add a quarter cup of honey. I mix it by hand.
