So my husband is traveling to China for the first time.
The first 1.5-2 day he will be in a area close to a chabad house / reataurant. The other 3 days he will he traveling to someplace else where there are no chabad houses or kosher food. What I do pack for him to take along?

He is a picky eater to boot.
Doesn't like tuna/salmon so no canned food.
His favorite food is eggs.

He won't have much time to eat. What ready foods can I pack along??

Beef jerky or beef sticks (that do not require refrigeration)
Protein Bars
Peanut Butter (the individual serving cups are great for travel)
Rice cakes or corn cakes
Almonds or mixed nuts
Granola
If he will have access to hot water or wants to take an electric kettle, that opens up a lot of hot meal options such as instant soups, instant mashed potatoes, oatmeal...

Ideas of food you can travel with that don’t need to be refrigerated:

Instant soups, instant oatmeal, instant cream of wheat. There are ready made packs of rice and quinoa available. There are shelf stable kosher meals you can get (Mealmart?). Boxed juice, milk, parve milks. Boxed milk with cereal? Peanutbutter and crackers, rice cakes, pretzels. Applesauce cups, canned fruit. Canned pickles, olives. Nuts. Freeze dried fruits. Fruit leather. Canned hummus, babaganoush. Beef jerky.

He should take along some protein bars, for emergencies.

I'd contact the Chabad/restaurant and ask if they sell meals for travelers. That might be your best bet.

I'm sorry but as an adult he'll have to get over picky. My husband is "picky" but survived India, Nepal and others.

Can he order food from the Chabad where he'll be starting out to take with him for the last few days of the trip?

Not sure where you are located, but if in the tri-state area, Meal Mart has "ready to eat" meals that are shelf stable available in most of the supermarkets. My DH and I have used those in China- most of them can even be eaten room temp. My DH also takes crackers, dried salami, vacuum packed cheeses, granola bars, protein bars, and peanut butter. You can get fruit in China but would not suggest using the water to wash them (or brush teeth). Your DH should use bottled water. The Chabad Shluchim are very helpful, btw, and if he will be in Beijing, there is a little store attached to the shul/restaurant where they sell kosher food that is ok for travel- even shelf stable chalav yisroel milk, iirc.
