ISO a chicken breast roll up recipe

When cooking for yom tov I cant handle dealing with chicken on the bone, so I usually do some sort of chicken breast roll up (like pastrami stuffed chicken)
Looking to change things up a bit. I have tried stuffing with veggi and making up a recipe but it came out dry and bland.

Anyone have a yummy stuffed chicken breast recipe. NOT capons - can’t handle that either

What chicken breast needs is some kind of fat to bring out the flavor and keep it moist. Look for treif stuffed chicken breast recipies and substitue parve items for the dairy.

Vegan cheese, parve cream cheese, or margarine are all good things to use. Try it with an assortment of sauteed veggies and experiment with spices. Italian spice blends or lemon pepper is fairly safe, or you could get more exotic and try "ethnic" flavors like curry, garam masala, thai, or chinese style.

I marinate them in pesto, roll and coat them in cornflake crumbs.
Drizzle with some olive oil and bake.

Stuff it with kishka. Or wrap it in puff pastry.

dip into thousand island dressing and roll strips of colored peppers inside, coat with frenchies fried onions. Bake at 350 until done
