I have extra Pesach noodles sealed in the package that I didn't end up using. Can I save that for next year Pesach?

I would save them. Check the exp date. Store them in a cool place or even in the freezer.

It doesn't have an expiration date. Do you think it's still ok?

I'm pretty sure they will be fine for pesach 2019 if you store them cool/cold

You certainly can! I made noodels this Pesach that were from 2 Pesachs ago and then were excellent!
