I started making challah a few weeks ago. The recipe I found is that people were raving about:
3 cups water
8 tsp yeast
1 1/3 cup sugar
1 1/3 cup oil
8 eggs (yes, 8)
6 tsp salt
5 lb regular flour
Rise 1 hour, knead again, rise another hour. bake 45 min for large challahs.
I find it dry and crumbly. Am I baking too long/wrong ingredients?
