What single syllable Hebrew girls names are there?
Rus Is the only one I can think of that isn't too Israeli (Tal, Or, Chen, and Shai come to mind as others but I'm looking from more mainstream names.)

I thought of Bar and Mor, but they are both unisex Israeli names that sound bad in English, so that probably doesn't help you.

First two that come to mind are Shir and Gal, but I'm guessing those are pretty Israeli and not what you're looking for.

Any reason you want one syllable name?

I was also wondering this. I cannot think of any other non-Israeli-modern names with 1 syllable (except Rut as OP says).
But there are names such as
Noa
Yael
Leah
Maya
where the 2nd syllable starts with a vowel and rolls off the tongue easily, and makes the name sound short-ish.

Chai as variant of Chaya, but this may be too modernish for your taste.

Not a Hebrew name. Yiddish. And usually pronounced as a syllable and a half, Perel, not Pearl which is English.

Ziv - the biblical name for the month of Iyar (the month that the Beit Hamikdash was inaugurated by Shlomo according to sefer Melachim).

I know several women who go by one- syllable nicknames such as-
Ray- for Rachel or Raizel
Shan- for Shoshana
Deb- for Devorah
Chev- for Yocheved
Brach- for Bracha
Anything goes, really.

I thought I'd come across every permutation of every unheard of name on imamother.
But seriously. Dup?
Oh.

I thought that too for a second!
In English there's Eve, Fay, Ann, and a bunch more. And they are fairly easy to trandslate - Chava, Faiga, Chana, etc.

Looking for a good middle name got Hadassah. Hubby is picky. He vetoed Noa even though it's biblical. I realized we can't do Yael because her initials would be HYD (היד) which is awkward as it stands for Hashem should avenge their blood and is written after the name of those killed by our enemies. My mom's name is Leah and neither of us like Maya.
I love the name Hadassah but really want a middle name too!

Hadassah Sarah
Hadassah Rayzl
Hadassah Rachel
Hadassah Tova
Hadassah Malka
I could go on, but I think two syllable names flow nicely after a three syllable name.

I'm curious why you want a middle name. Hadassah is already three syllables so why make yourself crazy if you can't agree on a second one? Fwiw, I think Hadassah could work with a two syllable middle name as well.

I know it's long, way longer than the 1 syllable you're looking for, but what about Hadassa Avigail?

Forgive me if it’s not what ur looking for but may I suggest Ella or liba? They flow nicely with hadassa and easy on the tongue.
How about Leah?
