Does the keep warm setting on the Hamilton beach crockpot keep the cholent hot enough that it wont spoil?

No, you need to switch the crockpot to “low” before Shabbos.
ETA just saw you were asking about Hamilton. I don’t have that brand but the above advice is my experience from all the crockpots I’ve used.

I always turn my shabbos food onto warm before shabbos but after it’s been in low or high for a while and is really quite hot. I wouldn’t start it on warm
