Just fyi, because not everyone is aware, spelt is NOT wheat free. It is a form of wheat and contains gluten, just slightly less gluten than wheat. There are some people who are sensitive to actual wheat who seem to do better on spelt, but if you're needing a gluten free diet or dealing with a true wheat allergy, please be aware that substituting with spelt will not cut it.
