I'm afraid I don't have a recipe. I saute onions mushrooms and cubed squash. then add batter of eggs and flour that I throw together. bake in round pan.

The cranberry pear crisp recipe in the first Bais Yaakov cookbook is very good.
I'll also sometimes make carrot or squash muffins.

I don't generally bake using measurements, I just eyeball the ingredients.
Shredded zucchini and onion is my favorite. Instead of draining the liquid off, just mix with flour and let the veggies sit for a while. That will be all the liquid you need, then add oil, eggs, salt, and pepper.
Dark green zucchini give better flavor than the light green. If you can mix it with some of the yellow patty zucchini, it will have an amazing sweet flavor. You can only get the yellow ones in the summer, and they are definitely worth buying.

Veggie Roulade
2 potatoes, peeled
2 sweet potatoes, peeled
2 carrots, peeled
1 onion
1 red pepper
4 eggs
½ cup (120 ml) oil
¾ cup (3¼ oz.) flour
½ tablespoon parsley flakes
1 teaspoon salt
½ teaspoon pepper
Slice the vegetables thinly. Mix them together with everything else.
Line a baking sheet with parchment paper and spray with oil and flour. Pour the mixture and spread evenly.
Bake at 355°F (180°C) for 40 minutes.
Roll it up jelly roll style while still warm, using the paper to help you.
When it has cooled completely, slice it into 1" thick slices.

Mixed Vegetable Kugel
1 package California mix, coarsely chopped
2 tablespoons mayonnaise
1½ tablespoons breadcrumbs
1½ tablespoons flour
2 tablespoons oil
1 small onion minced
3 eggs
Combine all ingredients, mixing well. Pour into 9” pan. Bake at 350°F (175°C) for 50 minutes.

Sponge cherry kugal-
2 eggs
1 c sugar
1 c flour
1/4 c orange juice
1/4 c oil
1 scoop vanilla sugar
1 tspn baking powder
Mix. Put in half, then half can cherries, then rest of mixture
Bake on 350

Crumb kugal-
3 c flour
1 c sugar
1 egg
1 scoop vanilla sugar
3/4 cup oil
1 tspn baking powder
Mix until it’s a crumb consistancy. Press down a half mixture in pan, spread out a can of cherries, crumble rest of mixture on top. Can be made in muffin tins as well

lfab, I used that recipe for pesach and we loved it! do u use potato starch all year round? or is there a substitute u use and what would be the measurements? thx!

I just substitute with the same amount of flour. Comes out tasting the same (I've also made it for peach).
