I've taken 2 Wilton courses so I know how to make the buttercream. What I'm looking for is that light kind of cream you get on bakery birthday cakes. I know it tastes gross, but it must be easier to work with. Does anyone know how to make it?

as in whip cream ... can't quite decorate with that ... but spreads on the cake easy enough ...
