Where are some nice places to go on a date within an hour from monsey. Not activities just like nature so like a hike but winter proof for nighttime dating time. Private and couple can get to know each other.

Private?
A hotel room. They will get to know each other real well.
Seriously, it's not a good idea for couples to be private.
Hotel lobbies, bowling, ice skating - indoor.

Find out if any parks and trails in Bear Mountain/Harriman state park are open.
Most hiking trails are closed for the winter.

Bear mountain has an outdoor ice skating rink, not sure if they're open at night, but it's really cute and fun! (I went with DH one day during sheva brachos)

Try Walkway Across the Hudson (but it may close at night, check hours), Bear Mountain, Harriman, and other state parks on the Hudson like Croton Point, Croton Gorge Dam, Palisades overlooks, etc.

OP, I just saw you're looking for night time. If any of these parks are open in the winter, they close at dusk. Trails and state parks are generally not open at night.
It's rather dangerous to go to a secluded area at night.
