I thought if I start now & experiment I might have something to make on Pesach. I can use almond flour, tapioca starch, potato starch coconut sugar, fresh grated ginger, eggs. Fruit juice?
I could probably adapt a regular (GF or not) recipe but maybe someone here has tried this? We use few processed ingredients so no baking powder but I think I could use baking soda.
