Can I freeze dough before letting it rise? After braiding? After proofing? Would it give me better results than freezing a baked loaf?

I've had the best results just freezing after baking.
I recently tried freezing the dough unbraided.
But the challahs didn't rise nicely and didn't have the same soft fluffy texture once baked. (I left the dough to rise for plenty of time before and after braiding..)
Maybe others have had different experiences, but that was mine
