Because I heard when you go to a non kosher buffet you can eat the cut vegetables because they maybe cut it with a knife that they cut the non kosher meat

In my community they are considered fine. You can assume they are using a clean knife (I’m not sure about cut onions, but other veggies and fruit)

Are you talking about prepackaged, precut vegetables? Or something else? Or is it some kind of food display?

My husband prefers me to only buy cut up with kosher symbol

I personally don’t. You never know what else they used the knife for before cutting the produce.

Don't know if this true but I was told that Costco produce is frequently product of Israel so you have to make sure about trumah and maser.
Usually there is a label to see where it was grown but by precut you have to ask where it was grown

When purchasing from a supermarket or fruit store, you can assume that they have dedicated knives. Even if not, the only issue would be if the knife were not clean (unless you're talking about, eg, onions). And if they cut a lot of fruit and vegetables, you can still assume its OK.

This is what I was told as well. All the shuls in my community serve precut fruits including the most yeshivish ones.

Different rabbanim hold differently. I wouldn't give out something that's not clear cut widely accepted in shalach manot.
