Rooms included? For how many nights?
You can estimate about $150 per couple for meals. $110 or so per room per night. About $200 for each waiter and a ballroom for shabbos is usually between $2,000 - $3,000 depends on the hotel.
I would round it up to at least $15,000.

No you would need to pay for your waiters rooms with the exception being if u use a hall that has its own caterer.
If u rent rooms in a regular hotel and hire a caterer to come cater the shabbos , you would need to pay for rooms for wtvr staff is needed for your Simcha.

The staff commutes. This is so puzzling and doesn't relate to anything I saw

Yes for example and pesach program who flies staff to location for work are put up at hotel. Sometimes a close by one which is slightly cheaper but yes that’s how it works. Depends which caterer you use and where hotel is located...

I would gather close to 30,000. I once got a quote for my family of 25 and estimated price was 10,000 just for shabbos. Kosher catered food is a fortune

My friend rented house from Lakewood hosts and paid Simcha caterers $25 a person per meal. And was thrilled.

Babypink, $25 per person per meal is $150 a couple, that's not cheap. It's regular price.
