We did a nice short hike at Ein Gedi near Yam HaMelach that took us to a couple pretty waterfalls, but it was almost certainly be packed during chol hamoed, unless you get there early.

Thanks, how early is early? Also, how are the women dressed, are people going to be in bathingsuits?

By early means being there 6/7 am. By 10am places start getting crowded. (My observations). The Frum women are dressed of course, but if it's hot, you can always expect to see some scantly clad women.

Ein Bokek is nice and not too difficult. There might be a lot of people mid-morning, but it doesn't seem overcrowded . People don't dress in bathing suits but if it's hot enough, there will be women in shorts, tank tops, etc

There have been a lot of problems with sink holes (areas of the beach that are collapsing because of ground water issues.) Be sure to call ahead and make sure that the beach you are going to is safe. Any hotel in that area will be aware of the conditions.
