Obsessed with these Gluten Free Cookies!!! 🍪🍪🍪
These are made with coconut flour and let me tell you, I could eat the whole pan! But I won’t because I literally tell my clients not to do that so I will practice what I preach and be in control 👊🏻.
Today I doubled the recipe and used my homemade cashew butter instead of almond butter. So freakin good!!! This recipe is in my Healthy Pesach E-Cookbook https://nowaythatshealthy.com/.....kbook and I’m posting it here as well!
Chocolate Chip Coconut Flour Cookies @nowaythatshealthy
2 Tb coconut oil, softened or melted
2 Tb natural almond butter*
1 Tb honey
2 tsp vanilla extract
1 egg
1/4 cup coconut flour, not packed
1/4 tsp baking soda
Chocolate chips
Mix the first five ingredients together then add in the coconut flour and baking soda. Mix till combined. The batter may be runny. Place in the fridge for about 10 mins to thicken. Remove, then mix in the chocolate chips. Spoon mounds of the cookie dough onto a baking sheet lined with parchment paper. Press down slightly. Bake at 350°F for 8-10 minutes. If you have fan/convection setting, use it for these to get crispy edges.
*for nut free, replace nut butter with more coconut oil. I prefer the ones with nut butter though so use it if you can.
