Water challah recipe

I’ve been trying for a real. Fluffy inside. Crusty outside. Water challah. Like gross bakery in boro Park. But all the recipes are so far off. They taste like a dryer version of egg challah. And the crust is just not crusty.
Anyone know what I mean? Anyone have a real water challah recipe

Tx. Those recipes are exactly what I’m not looking for. Reb. Kanievskys challah doesn’t have eggs but it’s not a crusty water challah. It’s a doughy- tastes like egg- challah.
Does anyone know what I’m talking about? Even most bakeries don’t sell the kind I’m after. Am I the only one who likes the crusty fluffy style challah?

How have you made it? Use the biography recipe, not the BY cookbook. You will probably need less flour than the recipe calls for. I get 11 challos out of the recipe in the smaller (not smallest) oval pans. If you leave them in for a minute or few more, you will get a crunchy crust with a fluffly, NOT doughy challah. Even at about 36 minutes, the challah should not be doughy. Mine isn't.

This is the recipe that I use, it isn't a sweet recipe but it is delicious and my husband (and kids) love it. We are sephardic and our tradition is not to eat sweet bread, we make mezonot on any bread that is sweet. I also use spelt flour. This is the best spelt flour I have come across, the website regularly has sales https://www.vitacost.com/one-d.....80-oz

5 cups warm water
4 tablespoons yeast
3/4 cup sugar
1 and 1/4 cup oil
1.5 tablespoons salt
5 lb flour

This isn't very crusty though. Although maybe if you warmed it up without wrapping in tin foil it would have more of a crunch.

I’ve been on a search for crusty outside fluffy inside for a very long time! I’ve given up at this point but would be so happy if I found one!
