How do I keep cubed potatoes crispy?

I want to make some crispy cubed potatoes for Yom tov. I don't leave an oven or flame on. Can I prepare them completely before chag and reheat on hotplate, without them becoming soggy?

You mean like French fries=deep fried in hot oil?
Usually all deep fried food is best served immediately and makes no difference if it's coated or not coated.
