I just wanted to advise, regarding Marc Gottlieb's chart and recipes, that his cooking method for shoulder cuts 4+5 call for a short roasting time at a high heat.
Personally, low and slow (like 4 hours and even more) is what has always worked for me with these cuts and actually for almost all large cuts that I have tried.
Maybe the meat he uses is better quality than what I buy on sale at Osher Ad.
