You could turn it into bread pudding (savory or sweet). Slice it very thin and use as a base for pizza as suggested above. Dry and turn into breadcrumbs. Anything that doesn’t rely on the fluffiness.

Proofing yeast means to let the yeast bubble and rise in water with a little sugar. Then you add that mixture to the dough.
